Green tea
Green tea holds a particular place in the Asian tradition.
Unoxidised, it preserves the freshness of the leaf and the memory of its terroir.
At Hollin, every green tea is chosen for the precision of its gesture: clear water, brief infusion, a vegetal presence that unfolds without strain. The leaves come from old gardens, hand-picked and processed with patience.
What we seek here is clarity - the clarity of a tea that hides nothing, simply present. A reading of the landscape through the leaf, with no added aromas, no excess.
The collection brings together green teas from China and Japan, sometimes touched by a floral note when the flower settles without taking over. To drink in the morning for its liveliness, at midday for breathing space, or as a quiet marker through the day.
Why this selection
We choose our green teas for what they keep of the landscape: altitude, orientation of the gardens, patience of the gesture. Every lot is tasted before entering the collection; we set aside those that force their signature in favour of those that let the leaf speak. The maison does not seek exhaustiveness - only a coherence of reading, from one garden to the next.

Preparation and tasting
Filtered water brought to 75-80 °C, never boiling. Three to four grams of leaves for a 200 ml teapot. A first brief infusion - forty seconds -, then successive infusions, shorter still. Prefer porcelain or a gaiwan, which keeps no memory of a previous tea.
