    Jasmine tea

Jasmine tea is one of the oldest scented teas of China. The flower is not added: it rests upon the leaf for several nights, the time it takes to leave its fragrance, then removed before the tea keeps its trace. At Hollin, jasmine tea seeks precision - a fragrance to be sensed, never imposed. The leaf remains primary; the flower is only a breath, set upon the surface. Our selection brings together green teas chosen for their clarity, scented with fresh jasmine following long-held gestures. You find the freshness of the leaf, a discreet floral note, and sometimes the roundness of a second flower that extends without taking over. To drink at midday, when a fragrance is enough to recompose a moment. A tea that invites slowness, without particular ceremony.

    Why this selection

Jasmine tea is measured by the fineness of its fragrance. We set aside teas where the flower covers the leaf, where jasmine feels added rather than set. We keep those that pass through several nights of scenting, where the flower is then removed, and where the leaf remains recognisable beneath the fragrance.

    Preparation and tasting

Water at 75-80 °C, as for green tea. Three grams of leaves per 200 ml. A brief infusion - forty to fifty seconds - enough to release the flower without exhausting it. Prefer a pale cup, which lets the liquor's colour be seen.
