    Description

Genmaicha blends the freshness of green tea with the toasted sweetness of rice. At the window, the flowers still seem to be waiting.

    Ingredients

Japanese Sencha green tea, puffed toasted rice, osmanthus flowers, rose petals. No added flavourings.

    Terroir, cultivar and leaf biochemistry

Madame Butterfly is a genmaicha: a sencha from Japan, a green tea made from Camellia sinensis and steamed, blended with roasted puffed rice. We have added osmanthus flowers and rose petals, with no added flavourings. Genmaicha originated in Japan as an everyday tea, with roasted rice extending the leaves; today, it is prized for its balance. The puffed grains, sometimes burst into small pieces of « popcorn », contribute their roasted notes. This green genmaicha tea with puffed rice retains the vegetal freshness of sencha and its L-theanine.

    Organoleptic profile and liquor

The liquor is greenish yellow, slightly cloudy. The nose is roasted at first, almost biscuity, then floral thanks to the osmanthus. On the palate, the freshness of sencha meets the sweetness of rice: the cup is rounded, grain-like, and mildly astringent. Rose and osmanthus extend the finish with a floral touch. This green genmaicha tea pairs beautifully with a meal, particularly Japanese cuisine.

Brewing protocol (gong fu cha and Western) and storage

Western method: 3 g for 20 cl, water at 80 °C, 2 minutes. The rice tolerates slightly hotter water than sencha alone. In a kyusu or gong fu cha: 6 g for 15 cl, water at 80 °C, 45 seconds, then two additional, shorter infusions. Puffed rice is sensitive to moisture: close the tin quickly and keep it in a dry place, away from odours. Ingredients for Japanese cooking can be found in our Hollin du Goût section.
