Ingredients
Long Jing green tea, apple pieces, ginger, Ceylon cinnamon, green cardamom. No added flavourings.
Terroir, cultivar and leaf biochemistry
La Trace du Dragon begins with a Long Jing, the “dragon well”, a green tea from the Hangzhou region, in Zhejiang. Its Camellia sinensis leaves are dry-heated in pans, then pressed flat : this light roasting stops oxidation and gives it its chestnut notes. Long Jing is rich in L-theanine and catechins. We have paired it with pieces of apple, ginger, Ceylon cinnamon and green cardamom, with no added flavourings : a Long Jing with ginger, spiced yet faithful to the leaf.
Organoleptic profile and liquor
The liquor is yellow-green and clear. The nose blends the roasted notes of the Long Jing with the warmth of cinnamon and the resinous freshness of cardamom. On the palate, the leaf remains present, smooth and slightly nutty ; the apple rounds it out, while the ginger warms the finish. This spiced Long Jing green tea is made for autumn and winter, when you want a green tea that warms without becoming heavy.
Brewing protocol (gong fu cha and Western) and storage
Western method : 3 g for 20 cl, water at 75-80 °C, 2 to 3 minutes. The spices can withstand slightly hotter water than pure Long Jing, but boiling water would make the leaf bitter. Gong fu cha : 5 g for 12 cl, water at 80 °C, 40 seconds, then two to three infusions. The apple pieces are most expressive in the first cup. Store in a dry place, away from light, with the tin tightly closed to preserve the spices.
