    Description

A green tea with toasted rice, warm and comforting. Its cup is gentle, cereal-like and softly enveloping.

    Ingredients

Green tea, roasted rice. No added flavourings.

    Terroir, cultivar and leaf biochemistry

Rizière d'Automne is a roasted rice tea: a green tea made from Camellia sinensis combined with roasted rice, with no added flavourings. It is the simplest form of this Japanese tradition: two ingredients, nothing else. The green tea is heat-fixed to stop oxidation and preserve its catechins and L-theanine. The rice, roasted to a golden colour, develops compounds from the Maillard reaction, responsible for its roasted cereal notes. The rice replaces some of the leaves: the cup therefore contains less caffeine than a pure green tea.

    Organoleptic profile and liquor

The liquor is golden yellow, slightly cloudy. The nose is warm and toasted, reminiscent of bread and hazelnut. On the palate, the cup is gentle, round and mildly astringent: the rice dominates, while the green tea brings freshness to the finish. More understated than Madame Butterfly, with no flowers, Rizière d'Automne is for those who enjoy pure roasted cereal notes. It pairs perfectly with a meal.

Brewing protocol (gong fu cha and Western) and storage

Western method: 3 g for 20 cl, water at 80-85 °C, 2 to 3 minutes. In a kyusu or gong fu cha: 6 g for 15 cl, water at 85 °C, 45 seconds, followed by two shorter infusions. Water that is too cool dulls the rice, while boiling water makes the green tea harsh. Roasted rice is sensitive to moisture: close the tin immediately, keep it dry and consume within a few months of opening to preserve its crisp aromatic character.

    Frequently Asked Questions

    Does Rizière d'Automne contain caffeine?

Yes, but less than a pure green tea, as the rice replaces some of the leaves.

What is the difference from Madame Butterfly?

Rizière d'Automne contains only green tea and roasted rice; Madame Butterfly adds osmanthus and rose.

What should it be served with?

It pairs very well with a meal, particularly Japanese cuisine.
