Botany: Camellia sinensis

It is what allows a tea to express the purity of nature without artifice. The same cultivar planted in the mountains of Hunan or on the island of Taiwan will produce two liquors with radically different biochemical signatures.
The velvety sweetness perceived in a grand cru obviously does not come from any added sugar. This natural sweetness is the result of the plant's original biochemistry, particularly its high concentration of amino acids such as L-theanine and carbohydrates produced through photosynthesis. To release this delicacy without extracting the aggressive astringency of the tannins, which would mask this balance, it is essential to steep your leaves in gently simmering water, avoiding any thermal shock.
White tea, handled very little during its production, consists of extremely fragile downy buds that cannot withstand the brutality of boiling water. A thermal shock at 100 degrees would instantly destroy its botanical profile and release undesirable bitterness. To gently extract its delicate floral, fruity, and honeyed notes, it is essential to use gently simmering water, around 70 to 75 degrees, thereby ensuring a crystalline, velvety liquor entirely free of astringency.
The botanical difference is absolute: true tea comes exclusively from the leaves of the tea plant, Camellia sinensis, and naturally contains caffeine. The chemistry: enzymatic oxidation
It is the natural chemical phenomenon that shapes the identity of the beverage, similar to a cut apple browning when exposed to air. When the leaves are rolled or bruised, their cells break down and the polyphenols react with oxygen. A green tea is not oxidized and retains its vegetal freshness. A Oolong undergoes partial oxidation, developing floral or buttery notes. A black tea is 100% oxidized, which polymerizes the tannins and produces an amber liquor with malty or cocoa notes.
The complexity of a pure fine tea requires no synthetic chemistry. Jasmine notes come from natural enfleurage: the fresh flowers open at night in contact with the leaves. Buttery, stone fruit or honey notes arise directly from the cultivar's essential oils and are shaped by the tea master during partial enzymatic oxidation, particularly in the family of Oolongs.
White tea is the family that undergoes the least human processing, respecting the leaf in its rawest and most original state. Unlike oxidized or roasted families, it undergoes neither firing nor intensive rolling. The precious downy buds, like silver needles, are harvested by hand, withered in the shade and then dried extremely slowly in the open air. This gentle process preserves the integrity of its powerful cellular antioxidants and its absolute aromatic purity.
Although they both come from Camellia sinensis, the difference lies in time and craftsmanship, more specifically enzymatic oxidation. White tea is the leaf in its rawest state, simply withered and dried to preserve its original purity. In the great Asian tradition, the fragrance of a genuine specialty jasmine tea never comes from sprayed synthetic flavorings. It is the result of a slow natural scenting process known as yin zhi. The term Gushu refers to wild Yunnan teas from centuries-old trees. Their deep roots draw up a rare minerality. These teas possess raw energy (Cha Qi) and a complex tannic structure, particularly sought after for producing Pu-erh for extended aging.

Shading is an agricultural method applied to exceptional Japanese teas such as Gyokuro or Matcha. Three to four weeks before the spring harvest, the tea plants are covered with opaque cloths that filter out up to 90% of the light. Deprived of direct photosynthesis, the plant overproduces chlorophyll and concentrates L-Theanine. This process reduces astringency and amplifies the Umami flavor, creating a uniquely velvety texture on the palate.
The cultivation of Matcha or Gyokuro involves shading the tea plants beneath cloths, the Kabuse, three to four weeks before the harvest, filtering out up to 90% of the light. Deprived of sunlight, the plant overproduces chlorophyll, hence its emerald color, and massively concentrates L-theanine. This rare amino acid is responsible for the famed Umami flavor, offering a smooth, velvety texture on the palate, radically different from a full-sun tea.

Hojicha is a Bancha or Sencha that has been roasted at high temperature in porcelain drums. This process caramelizes the plant's sugars and destroys almost all of the caffeine. The liquor turns from green to amber, revealing warm fire-roasted notes of toast, mild coffee and roasted chestnut.
Nicknamed 'popcorn tea', Genmaicha is a traditional Japanese blend combining a green tea (usually Bancha) with roasted and sometimes popped brown rice grains. This pairing offers a perfect balance between the cultivar's vegetal freshness and the comforting indulgence of toasted grains. It is extremely low in caffeine.
The Uji region (near Kyoto) is the historic birthplace of Japanese green tea. Its misty climate, the river's constant humidity and its mineral-rich soils create perfect conditions for shading. It is here that the noblest cultivars are grown, offering Matcha ceremonial with unparalleled umami, without any unwanted astringency.
Aki Bancha is harvested in Japan in October. The leaves are more mature and thicker than those of spring. Lower in amino acids, this tea offers a rustic, woody, highly digestible liquor that is low in caffeine, perfect with a meal or for a zen evening.
Ceremonial grade uses the first shaded spring shoots, slowly ground on a stone mill. It is drunk pure (deep Umami, zero bitterness). Culinary grade uses more mature leaves, often from the second harvest. Its more pronounced astringency allows it to stand up to sugar and milk in pastries.
Tencha is the raw material for Matcha. It is a shaded green tea whose stems and veins are removed after drying, leaving only the pure flesh of the leaf. It is never rolled. Once ground very finely on a granite millstone, Tencha becomes Matcha.
The terroirs of Taiwan: mastery of Oolong
The island combines high altitude, permanent mist and wide temperature variations that slow leaf growth and concentrate its essential oils. Tea masters there practise highly precise partial oxidation, from 15% to 70%, followed by slow roasting. The result is milky, floral or roasted liquors, capable of withstanding numerous successive infusions without losing their structure.
Tea Oolong, commonly known as blue-green tea in Asia, is a remarkable family positioned precisely between unoxidised green tea and fully oxidised black tea. Its magic lies in the mastery of partial enzymatic oxidation. By stopping this oxidation at a precise percentage, ranging from 10% to 70%, the tea master shapes a dizzying aromatic palette, from notes of spring white flowers to dense aromas of dark honey and warm wood.
The preparation of tea Oolong requires sufficient heat to allow its large leaves, often rolled into compact pearls, to rehydrate and fully unfurl in the cup. The ideal water temperature is between 85 and 95 degrees, depending on its level of oxidation. Gong Fu Cha, which literally translates as the art of mastering time through tea, is the benchmark traditional tasting method. It consists of infusing a large quantity of leaves in a very small volume of water, as in a Gaiwan, for extremely short periods of just a few seconds. The same leaves are re-infused five to ten times in succession. This patient approach extracts the depth of an Oolong or a Pu-erh in stages, revealing its entire aromatic architecture.
Taiwan is the kingdom of high-mountain Oolong (Gao Shan Cha). Grown at altitudes above 1000 metres, in dense mist that reduces photosynthesis, these teas grow slowly. They concentrate vast amounts of amino acids, producing liquors with an extraordinarily creamy texture, explosive floral aromas (orchid, lilac) and striking natural sweetness.
