    Matcha

    Matcha is a green tea powder obtained by slowly grinding shade-grown leaves. Unlike other teas, it is not steeped: it is whisked with hot water in a bowl until a fine foam forms. The gesture is old, codified in the Japanese tradition of the tea ceremony. It requires few tools but a particular attention: a wide stable bowl, a bamboo whisk - the chasen -, a holder, a scoop. At Hollin, matcha is understood first as a practice. A brief but whole moment, where preparation matters as much as drinking. The powder settles; the water grazes it; the wrist finds its rhythm.     Preparation and tasting

    A bamboo scoop - chashaku - of powder into a wide bowl. Seventy ml of water at 75 °C. The whisk - chasen - held upright, quick W-motion until a fine foam forms. To drink immediately, without sugar or milk, to preserve the reading of the powder.
