    Matcha is a shade-grown green tea powder, whisked in hot water. Below are the questions most often asked.

    What is matcha?

    Matcha is a fine powder obtained by slowly grinding green tea leaves shaded before harvest. Unlike steeped tea, the whole leaf is consumed.

    How do I prepare matcha?

    Pour about 1 g of powder into a wide bowl. Add 70 ml of water at around 75-80 °C. Whisk with a bamboo chasen in a steady motion until a fine foam forms on the surface.

    Which tools are needed?

    Three pieces are enough: a wide stable bowl, a bamboo whisk (chasen) and a scoop (chashaku). A whisk holder helps preserve the chasen's shape over time.

    How should matcha be stored?

    Keep the powder in an airtight container, away from light, humidity and other aromas. Once opened, ideally use it within four to six weeks to preserve its colour and aroma.

    Which water should I use?

    A low-mineral water, around 75-80 °C, reveals the roundness of matcha without bringing out its bitterness.
