    Why we work without added or natural aromas

    Tea can be scented or it can remain as it is.

    At HOLLIN, we do not work with added aromas, even when they are described as natural.

    In many flavoured teas, scent is introduced after the leaf has been processed. It may be synthetic or extracted and isolated from natural materials. In both cases, it sits on top of the tea and creates an immediate impression, but it remains external. In certain traditions such as jasmine tea, the logic is different. The fragrance is not added. It is transmitted. The leaf absorbs the breath of the flower slowly, without intermediary. The difference is structural.

    A tea does not produce a single aroma. It produces several, which appear differently over time. Aroma is not fixed. It is a sequence. Unlike a perfume, a tea cannot be reduced to a single note. Some notes emerge immediately, others later through heat, air and repeated infusions. Aroma is not a label.

    Its character is shaped by three elements. The leaf carries an initial aromatic structure. The gesture transforms it through fixation, oxidation, shaping and drying. Time continues the process in the cup, across infusions and through storage. A tea is not a fixed flavour. It is a dynamic system.

    An added aroma interrupts this system. It stabilises perception but reduces variation. A tea without added aroma behaves differently. It requires attention and unfolds progressively. It is less immediate but more precise. This is not a question of better or worse. It is a question of relation.

    At HOLLIN, we do not seek to multiply aromas. We seek to preserve their balance. Our teas are not designed to smell of something. They are designed to hold.

    Adding an aroma, even a natural one, is an extraction. It isolates and reintroduces a fragment into a whole. Tea is already a balance of amino acids, sugars, polyphenols and volatile compounds. We choose to work within this balance rather than alter it.

    Choosing teas without added aromas is not a return to the past. It is a contemporary position. Less intensity, more precision. Less effect, more presence. Without added aromas, our teas allow a perception that is slower, quieter and more stable. A presence that settles rather than a sensation that passes.
