Terroir, cultivar and leaf biochemistry
Voile d'Ivoire is a Chinese oolong with milky notes. Oolongs are semi-oxidised teas: the leaves of Camellia sinensis are withered, shaken to begin partial oxidation, then fixed and rolled. This oolong tea with milky notes undergoes delicate milk-steaming during processing, giving it its softness. Its profile is reminiscent of Jin Xuan oolong, a cultivar known for its buttery texture. With no added flavourings, the leaves, rolled into balls, slowly unfurl in the water.
Organoleptic profile and liquor
The liquor is clear and golden yellow. The nose is soft, milky and creamy, with a floral touch. On the palate, the texture is round and silky, the astringency very low, the sweetness naturally indulgent. The finish is long and floral. This milk-steamed oolong appeals both to those discovering oolongs and to lovers of round cups.
Brewing protocol (gong fu cha and Western) and storage
Western method: 3 g for 20 cl, water at 90 °C, 3 to 4 minutes. Gong fu cha method: 6 g for 10 cl in a gaiwan or clay teapot, water at 90-95 °C, 30 seconds, then five to six infusions: the leaves open with each cup. Do not discard the leaves after the first infusion; the second is often the most expressive. Keep the tin closed, in a dry place, away from odours.
