Terroir, cultivar and leaf biochemistry
Vespérale is an organic Pu-erh from Yunnan. Pu-erh belongs to the family of fermented teas, known in China as “dark teas”: after fixation and rolling, the leaves of Camellia sinensis var. assamica undergo fermentation by micro-organisms, which profoundly transforms their polyphenols. This fermentation gives Pu-erh its woody and earthy notes. The name comes from vesper, Latin for evening: an evening infusion, conceived for the end of the day.
Organoleptic profile and liquor
The liquor is very dark, reddish brown, almost black. The nose evokes the forest floor, damp wood, soft leather. On the palate, the cup is round and enveloping, with no bitterness or astringency. The finish lingers gently, with woody, warming nuances. Pu-erh contains caffeine, but its roundness makes it an end-of-day tea for those who tolerate it.
Brewing protocol (gong fu cha and Western) and storage
Western method: 3 g for 20 cl, boiling water at 100 °C, 3 to 4 minutes. Gong fu cha method: 6 g for 10 cl, first rinse the leaves for 5 seconds with boiling water, discard this water, then infuse for 10 to 15 seconds and repeat up to eight times. Pu-erh keeps for a long time: store it in a dry, well-ventilated place, away from light and strong odours.
