Terroir, cultivar and leaf biochemistry
Terre Rouge is a pure loose-leaf black tea from Yunnan, with no blend or flavouring of any kind. Large-leaf tea plants, Camellia sinensis var. assamica, grow in this province in south-western China, on red soils, hence its name. Black tea is fully oxidised: withered, rolled and then oxidised, the leaf transforms its catechins into theaflavins and thearubigins, which give it its coppery colour and tannic structure. We chose it for its consistency: a foundational loose-leaf black tea, grounded and direct.
Organoleptic profile and liquor
The liquor is a dense reddish brown. The nose is malty and woody, with a hint of cacao. On the palate, the opening is round, the tannins present but supple, and the texture generous. The malty and woody notes remain steady through to the finish. It is a pure, woody black tea, ideal in the morning; it takes a dash of milk very well for those who enjoy it that way.
Brewing protocol (gong fu cha and Western) and storage
Western method: 2,5 g for 20 cl, water at 95 °C, 3 to 4 minutes; beyond that, the tannins make the cup harsh. In gong fu cha: 5 g for 10 cl, water at 95 °C, 15 seconds, followed by four to five infusions. Buying loose-leaf black tea allows for precise measuring and lets you see the quality of the leaves. Keep the tin closed, in a dry place, away from light and odours. It can also be discovered at the HOLLIN du Goût counter in Sartrouville.
