    Description

The leaves are lightly transformed, the material remains open. Floral notes appear naturally, without intervention.

    Ingredients

    White tea (Bai Mu Dan).

    No added flavourings.

    Terroir, cultivar and leaf biochemistry

Fleur Blanche is based on a Bai Mu Dan, the “white peony”, a white tea from China composed of one bud and two young leaves of Camellia sinensis. White tea is the least processed family : the leaves are simply withered, then dried, without rolling or heating. Oxidation remains very low and spontaneous. The leaf retains its fine hairs, its silvery down, and a significant proportion of its catechins and L-theanine. This white tea infusion is accompanied by a subtle elderflower note, which highlights the natural floral character of the Bai Mu Dan.

    Organoleptic profile and liquor

The liquor is pale yellow, almost golden, and very clear. The nose is floral, with notes of sweet hay, wildflowers and light honey. On the palate, the texture is silky, the astringency almost absent, the sweetness natural. The elderflower extends the finish with a floral touch, without ever overpowering the tea. It is a delicate floral white tea, to be enjoyed at any time of day, revealing more as the cup cools.

Brewing protocol (gong fu cha and Western) and storage

Western method : 3 g for 25 cl, as the leaves are light, water at 80 °C, 3 to 5 minutes. Gong fu cha : 5 g for 10 cl in a gaiwan, water at 85 °C, 30 seconds, then up to five infusions, adding 10 seconds each time. White tea forgives a slightly long infusion but not boiling water. Keep it in its closed tin, in a dry place, away from light and strong odours ; it keeps well and becomes rounder over time.
